Yes, you can enter a place name in different languages.
It is a bit unclear about how Gramps decides which Name to use for a place. I have tried to ignore this because the Place reworks for GEPS43 and GEPS45 were likely to render any explorations obsolete. Since those GEPS seem to have fallen off the development roadmap, I ought to re-think that decision.
The precedence of Names and how they intertwine with changing enclosing hierarchies, modified by Dates and Language codes is described in Places in Gramps wiki article. But the discussion is somewhat unstructured and hard to digest.
I am assuming you mean maps generated in the Geography View.
If you right-click within the map, you will have some context menus, one of which will be Replace “map name” by =>. This will present other map options. I believe OpenStreetMaps is the default map option and it uses the endonymn name for places.
As I create place records, I try to use the endonymn place name (or at least the name using a Latin alphabet). I add the name in English as an alternate name so I do a search for for the record.
