If I copy an address from a .pdf such as
“Poynton, Poynton, Macclesfield R.D., Cheshire, England”
to a place name on GRAMPS I get the following any ideas why
“Poynton, Poynton, Maccles�eld R.D., Cheshire, England”

Yes: this is a “ligature”… two or more letters formed into a single glyph (“fi” → glyph). I’m not sure what you can do though. Maybe those terms will give you some guidance on what to search for.
